  • ¾ cup unsweetened cocoa powder
  • tsp baking powder
  • tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper.
  • In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until well combined.
  • Gradually add the wet ingredients to the dry ingredients, mixing until the batter is smooth and free of lumps.
  • Stir in the boiling water until the batter becomes thin. Don't worry; this will contribute to the cake's moistness.
  • Pour the batter evenly into the prepared cake pans and tap them gently on the countertop to remove any air bubbles.
  • Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  • Remove the cakes from the oven and let them cool in the pans for 10 minutes. Transfer to a wire rack to cool completely.
