Toojays Banana Dream Cake

- 1 9-inch cake pan
- 1 Large mixing bowl
- 1 Whisk
- 1 Spatula
Ingredients
- 2 cup all-purpose flour
- 1½ baking powder
- ½ baking soda
- ½ salt
- ½ cup unsalted butter at room temperature
- 1¼ cup granulated sugar
- 2 pcs large eggs
- 1 pure vanilla extract
- 3 pcs ripe bananas mashed
- ½ cup buttermilk
Instructions
- Preheat your oven to 350°F (180°C). Grease a 9-inch cake pan and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, beating well after each addition.
- Stir in the vanilla extract and mashed bananas.
- Gradually add the dry ingredients to the banana mixture, alternating with the buttermilk.
- Mix until just combined.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes
- The bananas used in this recipe should be ripe for best results.
- To make buttermilk, combine 1/2 cup of milk with 1 1/2 teaspoons of white vinegar or lemon juice. Let it sit for 5 minutes before using.
- If you don’t have buttermilk, you can use regular milk instead.
Special Tips:
- Top the cake with a drizzle of melted chocolate or a scoop of ice cream for an extra special treat!
- For a nutty twist, add 1/2 cup of chopped walnuts or pecans to the batter before baking.
