Strega Nona Pasta
A delicious and simple Italian pasta dish made with San Marzano tomatoes, garlic, fresh basil, and grated Parmigiano-Reggiano cheese.
Equipment
- Large pot
- Large skillet
- wooden spoon
Ingredients
- 1 pound of spaghetti
- 1 can of San Marzano tomatoes
- 3 cloves of garlic, minced
- ¼ cup of fresh basil, chopped
- ½ cup of Parmigiano-Reggiano cheese, grated
- Salt and pepper to taste
- Extra-virgin olive oil
Instructions
- Cook spaghetti in a large pot of salted boiling water until al dente.
- While the pasta cooks heat a large skillet over medium-high heat. Add a drizzle of olive oil and minced garlic. Cook for 1-2 minutes, until fragrant.
- Add the can of San Marzano tomatoes to the skillet and break them up with a wooden spoon. Season with salt and pepper to taste.
- Reduce the heat to medium-low and let the sauce simmer for 15-20 minutes, stirring occasionally.
- Drain the cooked spaghetti and add it to the skillet with the tomato sauce. Toss to coat the pasta evenly with the sauce.
- Serve the pasta in bowls, topped with grated Parmigiano-Reggiano cheese and chopped fresh basil.

- Be sure to use a large pot of salted boiling water to cook the pasta, as this will help prevent it from sticking together.
