Ricotta and Spinach Sacchetti Pasta

Ingredients
  

  • 1 pound pasta dough
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • ½ cup grated Parmesan cheese
  • 1 egg yolk
  • 1 can (28 oz) crushed tomatoes
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions
 

  • In a bowl, mix together the ricotta cheese, chopped spinach, Parmesan cheese, and egg yolk until well combined. Set aside.
  • Roll out the pasta dough and cut it into small circles using a cookie cutter or a cup.
  • Place a teaspoonful of the ricotta mixture in the center of each pasta circle.
  • Fold the circle in half to form a little pouch, pressing the edges to seal.
  • In a large pot, bring salted water to a boil. Add the Sacchetti pasta and cook for about 3-4 minutes, or until the pasta is tender and cooked through.
  • While the pasta is cooking, prepare the tomato sauce. In a large saucepan, heat some olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.
  • Add the crushed tomatoes, dried oregano, salt, and pepper to taste. Stir to combine and let the sauce simmer for about 10-15 minutes, or until it thickens slightly.
  • Drain the pasta and add it to the tomato sauce. Toss to combine and serve immediately. If desired, sprinkle some red pepper flakes on top for some extra heat.
