Ricotta and Spinach Sacchetti Pasta
Delicious pasta pouches filled with creamy ricotta and spinach filling, served with a rich tomato sauce.

Ingredients
- 1 pound pasta dough
- 1 cup ricotta cheese
- 1 cup fresh spinach, chopped
- ½ cup grated Parmesan cheese
- 1 egg yolk
- 1 can (28 oz) crushed tomatoes
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- In a bowl, mix together the ricotta cheese, chopped spinach, Parmesan cheese, and egg yolk until well combined. Set aside.
- Roll out the pasta dough and cut it into small circles using a cookie cutter or a cup.
- Place a teaspoonful of the ricotta mixture in the center of each pasta circle.
- Fold the circle in half to form a little pouch, pressing the edges to seal.
- In a large pot, bring salted water to a boil. Add the Sacchetti pasta and cook for about 3-4 minutes, or until the pasta is tender and cooked through.
- While the pasta is cooking, prepare the tomato sauce. In a large saucepan, heat some olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.
- Add the crushed tomatoes, dried oregano, salt, and pepper to taste. Stir to combine and let the sauce simmer for about 10-15 minutes, or until it thickens slightly.
- Drain the pasta and add it to the tomato sauce. Toss to combine and serve immediately. If desired, sprinkle some red pepper flakes on top for some extra heat.

- You can prepare the pasta dough and fill ahead of time and store it in the refrigerator until ready to use.
- Be sure to handle the pasta dough carefully to avoid tearing it.
- It’s important to seal the edges of the pasta pouches well to prevent the filling from leaking out during cooking.
