Rudolph’s Southern Recipe Pork Rinds

Ingredients
- Fresh pork skin
- salt
- seasonings of your choice (such as barbecue, spicy, or plain)
Instructions
- Preheat your oven to 325°F (163°C).
- Rinse the pork skin under cold water and pat it dry with a paper towel.
- Cut the pork skin into small, bite-sized pieces or strips.
- In a large pot, add the pork skin and cover it with water. Bring the water to a boil and let it simmer for about 1 hour until the skin becomes tender.
- Remove the pork skin from the pot and allow it to cool. It should be soft and pliable.
- Once cooled, slice the pork skin into thin strips or bite-sized pieces.
- Lay the strips or pieces of pork skin on a baking sheet lined with parchment paper.
- Sprinkle salt and your choice of seasonings evenly over the pork skin.
- Place the baking sheet in the preheated oven and bake for about 2 hours or until the pork skin turns golden brown and crispy.
- Remove the pork rinds from the oven and let them cool before enjoying this crunchy snack.
