Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • Zest of 2 lemons
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp baking powder

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the lemon zest and lemon juice to the butter mixture, and mix well to incorporate the flavors.
  • In a separate bowl, whisk together the all-purpose flour and baking powder. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  • Scoop out tablespoon-sized portions of the dough and roll them into balls. Place the cookie dough balls onto the prepared baking sheet, leaving space between each cookie.
  • Gently press down on each cookie dough ball with the back of a fork to create a crisscross pattern and flatten them slightly.
  • Bake the cookies in the preheated oven for approximately 10-12 minutes or until the edges turn golden brown.
  • Remove the cookies from the oven and let them cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
