Pollo Asado Chipotle
A flavorful and easy-to-prepare Mexican grilled chicken dish marinated in a mixture of garlic, lime juice, chipotle peppers, and spices.
Equipment
- Grill
- resealable plastic bag
- meat thermometer
Ingredients
- 4 boneless, skinless chicken breasts
- 4 garlic cloves, minced
- ¼ cup fresh lime juice
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp chili powder
- ½ tsp salt
- 2 canned chipotle peppers in adobo sauce, minced
Instructions
- In a bowl, mix together the garlic, lime juice, cumin, oregano, chili powder, salt, and chipotle peppers.
- Place the chicken breasts in a large resealable plastic bag and pour in the marinade. Seal the bag and massage the chicken to ensure that it is fully coated with the marinade.
- Marinate the chicken in the refrigerator for at least 2 hours, but preferably overnight.
- Preheat a grill to medium-high heat.
- Remove the chicken from the marinade and discard the excess marinade.
- Grill the chicken for 6-8 minutes per side or until the internal temperature reaches 165°F.
- Let the chicken rest for 5 minutes before slicing and serving.

Recipe Notes:
- Use bone-in chicken if preferred, but adjust the cooking time accordingly.
- Adjust the spiciness level by adding more or fewer chipotle peppers.
- Baste the chicken with the leftover marinade while grilling for added flavor.
- Use a cast-iron grill pan if grilling outside is not an option.
- Use freshly squeezed lime juice for a tangy and fresh flavor.
- Double the recipe and freeze the extra chicken in the marinade for a quick and easy meal later on.
