Homemade Pie Crust Recipe Without a Food Processor
Learn how to make a flaky buttery pie crust from scratch without a food processor.
Equipment
- Large mixing bowl
- pastry cutter or two knives
- Rolling Pin
- 9-inch pie dish
- fork
Ingredients
- 1¼ cups all-purpose flour
- ½ tsp salt
- ½ tsp sugar
- ½ cup unsalted butter, cold and cut into small cubes
- ¼ cup vegetable shortening, cold
- 4-5 tbsp ice water
Instructions
- In a large mixing bowl, whisk together the flour, salt, and sugar.
- Add the cold butter and shortening to the flour mixture. Using a pastry cutter or two knives, cut the butter and shortening into the flour until the mixture resembles coarse sand.
- Add the ice water, 1 tbsp at a time, until the dough comes together in a ball. Be careful not to overwork the dough.
- Turn the dough out onto a floured surface and shape it into a disk. Wrap it in plastic wrap and refrigerate for at least 1 hour.
- After the dough has chilled, roll it out on a floured surface to the desired thickness.
- Gently transfer the dough to a 9-inch pie dish and trim the edges. Use a fork to prick the bottom and sides of the crust.
- At this point, you can either bake the crust immediately or fill it with your desired filling.

Recipe Notes:
- This recipe makes enough dough for one 9-inch pie crust. If you’re making a pie that requires a top crust, be sure to double the recipe.
- Be sure to use cold butter and shortening to achieve a flaky crust.
- Don’t overwork the dough or it will become tough.
- If the dough is too dry, add more ice water, 1 tbsp at a time. If the dough is too wet, add more flour, 1 tbsp at a time.
- Be sure to refrigerate the dough for at least 1 hour before rolling it out.
- To prevent the crust from shrinking while baking, chill it in the pie dish for 30 minutes before baking.
- If the edges of the crust are browning too quickly while baking, cover them with foil.
- To make a flakier crust, use half butter and half shortening.
- Experiment with different flours and fats to find the perfect combination for your taste.
- Don’t be afraid to get creative with the decorations and toppings for your pie crust.
