Equipment
- Large Pan
- wooden spoon
- Large pot
- colander
Ingredients
- Fresh sardines (4-6 fillets)
- Wild fennel (1 bunch, chopped)
- Saffron threads (1/4 teaspoon)
- Pine nuts (1/4 cup)
- Extra-virgin olive oil (3 tablespoons)
- Onion (1, finely chopped)
- Garlic cloves (2, minced)
- Anchovy fillets (3-4, chopped)
- Tomato paste (1 tablespoon)
- Raisins (2 tablespoons)
- White wine (1/2 cup)
- Bucatini or spaghetti (12 ounces)
- Salt and pepper to taste
- Bread crumbs (for garnish)
- Fresh parsley (for garnish)
Instructions
- Begin by cleaning the sardines, removing the heads and internal organs. Rinse them under cold water and pat dry with a paper towel.
- In a large pan, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they turn golden and fragrant.
- Incorporate the anchovy fillets into the pan, breaking them down with a wooden spoon until they dissolve into the mixture.
- Stir in the tomato paste, wild fennel, and saffron threads, combining all the flavors.
- Add the sardines to the pan, gently cooking them for a few minutes on each side until they are cooked through and tender.
- Pour in the white wine, allowing it to simmer and infuse the dish with its flavors. Add the raisins and pine nuts, stirring well to distribute the ingredients evenly.
- While the sauce simmers, cook the pasta in a large pot of salted boiling water until al dente. Drain the pasta, reserving a small amount of the cooking water.
- Combine the pasta and the sauce, tossing gently to coat the pasta evenly. If needed, add a splash of the reserved cooking water to achieve the desired consistency.
- Serve the Pasta con Sarde in individual bowls, garnishing with a sprinkle of bread crumbs and fresh parsley for added texture and visual appeal.
