Ingredients
  

  • 1 pound elbow macaroni
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 4 cups whole milk
  • 1 tsp  Dijon mustard
  • 2 cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  • Cook the elbow macaroni in a large pot of salted boiling water until al dente. Drain and set aside.
  • In a large saucepan, melt the butter over medium heat. Add the flour and whisk until smooth. Cook for 1-2 minutes, whisking constantly.
  • Slowly pour in the milk, whisking constantly to prevent lumps from forming. Add the Dijon mustard and whisk until combined.
  • Cook the sauce, stirring constantly until it thickens and comes to a simmer. Remove from the heat and stir in the cheddar and Parmesan cheeses until melted and smooth.
  • Add the cooked macaroni to the cheese sauce and stir to coat.
  • Pour the macaroni and cheese into the prepared baking dish. Sprinkle the breadcrumbs evenly over the top.
  • Bake for 25-30 minutes, or until the top is golden brown and crispy.

Recipe Notes:
  • If you want to prepare this dish ahead of time, you can assemble it up to step 7 and then cover it with plastic wrap and refrigerate it for up to 24 hours. When you’re ready to bake it, remove the plastic wrap and bake as directed.
  • Be careful not to overcook the pasta or the cheese sauce. Overcooked pasta can become mushy, and overcooked cheese sauce can become gritty or separate.
  • Keep an eye on the breadcrumbs during baking to prevent them from burning. If they start to get too dark, you can cover the dish with foil to prevent further browning.
