Max and Ruby Cake Recipe
This delicious and easy-to-make cake features moist vanilla cake layers with cream cheese frosting and fresh strawberries on top, perfect for any occasion.
Equipment
- Two 9-inch round cake pans
- Mixing bowls
- electric mixer
- wire rack
- Cake stand or serving plate
Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- ½ cup unsalted butter, room temperature
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- ¾ cup milk
- 8 ounces cream cheese, room temperature
- 1 cup powdered sugar
- Fresh strawberries, for topping
Instructions
- Preheat the oven to 350°F. Grease two 9-inch round cake pans and set aside.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, and beat well after each addition. Mix in the vanilla extract.
- Gradually add the flour mixture to the butter mixture, alternating with the milk, and mix until just combined.
- Divide the batter evenly between the two prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
- To make the frosting, beat the cream cheese and powdered sugar together until smooth and creamy.
- Place one cake layer on a serving plate and spread a layer of frosting on top. Add the second cake layer and frost the top and sides of the cake. Top with fresh strawberries.

- For an even more indulgent treat, try adding a layer of chocolate ganache in between the cake layers.
- To make the cake more colorful, add food coloring to the batter or frosting.
- The cake can be made a day in advance and stored in the refrigerator until ready to serve.
