Equipment

  • Two 9-inch round cake pans
  • Mixing bowls
  • electric mixer
  • wire rack
  • Cake stand or serving plate

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • ¾ cup milk
  • 8 ounces cream cheese, room temperature
  • 1 cup powdered sugar
  • Fresh strawberries, for topping

Instructions

  • Preheat the oven to 350°F. Grease two 9-inch round cake pans and set aside.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, and beat well after each addition. Mix in the vanilla extract.
  • Gradually add the flour mixture to the butter mixture, alternating with the milk, and mix until just combined.
  • Divide the batter evenly between the two prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  • To make the frosting, beat the cream cheese and powdered sugar together until smooth and creamy.
  • Place one cake layer on a serving plate and spread a layer of frosting on top. Add the second cake layer and frost the top and sides of the cake. Top with fresh strawberries.

Notes

Recipe Notes:
  • For an even more indulgent treat, try adding a layer of chocolate ganache in between the cake layers.
  • To make the cake more colorful, add food coloring to the batter or frosting.
  • The cake can be made a day in advance and stored in the refrigerator until ready to serve.
  • Let the cake come to room temperature before slicing to prevent the frosting from melting.

Special Tips:
  • Use room temperature ingredients for better incorporation.
  • Don’t overmix the batter to avoid a dense cake.
  • Use fresh strawberries for the best flavor and texture.
  • For an extra-special touch, add some edible flowers on top.
  • Allow the cake to cool completely before frosting to prevent the frosting from melting.
