Macho Salad Hillstone Recipe
This salad features grilled chicken, fresh vegetables, and a zesty lime vinaigrette for a flavor explosion in your mouth.
Equipment
- Grill
- Mixing bowl
Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 avocado, diced
- 4 cups mixed greens
- 1 cup tortilla strips
- ½ cup lime vinaigrette dressing
Instructions
- Preheat your grill to medium-high heat.
- Brush the chicken breasts with olive oil and season with salt and pepper.
- Grill the chicken for 6-8 minutes on each side, or until the internal temperature reaches 165°F.
- Let the chicken rest for 5 minutes, then slice it into thin strips.
- In a large bowl, combine the black beans, corn, avocado, mixed greens, and tortilla strips.
- Add the sliced chicken to the bowl and toss everything together.
- Drizzle the lime vinaigrette over the top and toss again.
- Serve immediately and enjoy!
