Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 avocado, diced
  • 4 cups mixed greens
  • 1 cup tortilla strips
  • ½ cup lime vinaigrette dressing

Instructions
 

  • Preheat your grill to medium-high heat.
  • Brush the chicken breasts with olive oil and season with salt and pepper.
  • Grill the chicken for 6-8 minutes on each side, or until the internal temperature reaches 165°F.
  • Let the chicken rest for 5 minutes, then slice it into thin strips.
  • In a large bowl, combine the black beans, corn, avocado, mixed greens, and tortilla strips.
  • Add the sliced chicken to the bowl and toss everything together.
  • Drizzle the lime vinaigrette over the top and toss again.
  • Serve immediately and enjoy!
