Kilkenny Corned Beef Recipe
A hearty and flavorful Irish dish made with tender beef brisket, potatoes, carrots, and cabbage.
Equipment
- Large pot
- Knife
- Cutting board
Ingredients
- 3 lbs beef brisket
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bay leaf
- 2 tbsp pickling spice
- 4 carrots, peeled and chopped
- 4 potatoes, peeled and chopped
- ½ head cabbage, chopped
- Salt and pepper to taste
- Splash of Guinness beer (optional)
Instructions
- Rinse the beef brisket and place it in a large pot. Cover the brisket with water and add the chopped onion, minced garlic, bay leaf, and pickling spice. Bring to a boil, then reduce the heat and simmer for 2-3 hours, or until the brisket is tender.
- Remove the brisket from the pot and set it aside. Add the chopped carrots and potatoes to the pot and bring to a boil. Reduce the heat and simmer for 15 minutes.
- Add the chopped cabbage to the pot and continue to simmer for another 15-20 minutes, or until the vegetables are tender.
- Slice the brisket against the grain and serve with the cooked vegetables.

Recipe Notes: For a more flavorful broth, try adding a splash of Guinness beer to the pot during
the cooking process.
