Gluten Free Paczki Recipe
Enjoy traditional paczki without sacrificing taste with this gluten-free recipe. Soft, pillowy doughnuts are filled with your favorite filling and coated with a sprinkle of powdered sugar for a sweet and satisfying treat.

Ingredients
- 2 cups gluten-free all-purpose flour
- 2 tbsp granulated sugar
- 1 tsp active dry yeast
- ½ tsp salt
- 2 large eggs, at room temperature
- ½ cup warm milk
- ¼ cup unsalted butter, melted
- Oil for deep frying
- Powdered sugar for dusting
- Your favorite filling (e.g. jelly, custard, fruit preserves, etc.)
Instructions
- In a large mixing bowl, whisk together the gluten-free flour, sugar, yeast, and salt.
- In a separate bowl, whisk the eggs, warm milk, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Knead the dough on a lightly floured surface for 5 minutes.
- Place the dough in a greased bowl, cover with plastic wrap, and let it rest in a warm place for 30 minutes.
- On a floured surface, roll out the dough to 1/4-inch thickness.
- Use a round cookie cutter to cut out 8 circles of dough.
- Fill each circle of dough with 1-2 teaspoons of your favorite filling.
- Pinch the edges of the dough together to seal the filling inside.
- Heat the oil in a deep saucepan to 375°F.
- Fry the paczki in the hot oil until they are golden brown on both sides, about 2-3 minutes.
- Remove the paczki from the oil using a slotted spoon and drain on paper towels.
- Dust the paczki with powdered sugar before serving.

Recipe Notes:
- For a crispier paczki, let the dough rest for an additional 15 minutes before rolling and cutting.
- You can also roll the paczki in granulated sugar before deep frying for added crunch.
- Try different fillings, such as nutella, lemon curd, or even ice cream, to switch up the flavor of your paczki.
- For a gluten-free paczki that’s even more authentic, try using a gluten-free sourdough starter in place of the active dry yeast.
- To make the paczki even sweeter, top with a drizzle of melted chocolate or a sprinkle of your favorite toppings, such as chopped nuts or sprinkles.
