Gluten Free Paczki Recipe

Ingredients
  

  • 2 cups gluten-free all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp active dry yeast
  • ½ tsp salt
  • 2 large eggs, at room temperature
  • ½ cup warm milk
  • ¼ cup unsalted butter, melted
  • Oil for deep frying
  • Powdered sugar for dusting
  • Your favorite filling (e.g. jelly, custard, fruit preserves, etc.)

Instructions
 

  • In a large mixing bowl, whisk together the gluten-free flour, sugar, yeast, and salt.
  • In a separate bowl, whisk the eggs, warm milk, and melted butter.
  • Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  • Knead the dough on a lightly floured surface for 5 minutes.
  • Place the dough in a greased bowl, cover with plastic wrap, and let it rest in a warm place for 30 minutes.
  • On a floured surface, roll out the dough to 1/4-inch thickness.
  • Use a round cookie cutter to cut out 8 circles of dough.
  • Fill each circle of dough with 1-2 teaspoons of your favorite filling.
  • Pinch the edges of the dough together to seal the filling inside.
  • Heat the oil in a deep saucepan to 375°F.
  • Fry the paczki in the hot oil until they are golden brown on both sides, about 2-3 minutes.
  • Remove the paczki from the oil using a slotted spoon and drain on paper towels.
  • Dust the paczki with powdered sugar before serving.

  • For a crispier paczki, let the dough rest for an additional 15 minutes before rolling and cutting.
  • You can also roll the paczki in granulated sugar before deep frying for added crunch.
