Denny’s Pancake Recipe

Ingredients
- 2 cups all-purpose flour
- 3 tbsp sugar
- 1 tbsp baking powder
- ½ tsp salt
- 2 large eggs, separated
- 1¾ cups milk
- ½ cup unsalted butter, melted and cooled
- Cooking spray
Instructions
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, beat the egg whites until stiff peaks form.
- In another bowl, whisk together the egg yolks, milk, and melted butter.
- Add the egg yolk mixture to the dry ingredients and mix until just combined. Do not overmix; some lumps are okay.
- Gently fold the beaten egg whites into the batter until no white streaks remain.
- Heat a non-stick skillet or griddle over medium heat and coat with cooking spray.
- Use a 1/4 cup measure to scoop the batter onto the hot skillet.
- Cook for 2-3 minutes, or until bubbles form on the surface and the edges start to look set.
- Flip the pancake and cook for another 1-2 minutes, or until the pancake is cooked through and golden brown.
- Serve the pancakes warm with your favorite toppings.

Recipe Notes:
- If the batter seems too thick, you can add a splash of milk to thin it out.
- To make the pancakes even more flavorful, add a teaspoon of vanilla extract or a pinch of cinnamon to the batter.
- If you don’t have unsalted butter, you can use salted butter, but reduce the amount of salt in the recipe accordingly.
- The cooking time will vary depending on your stove and pan. The pancakes should take 2-3 minutes per side on medium heat.
- Keep the cooked pancakes warm in a preheated oven until you’re ready to serve them.
- Use a non-stick skillet or griddle and coat it with cooking spray to prevent sticking.
- Let the batter rest for a few minutes before cooking to allow the baking powder to activate and create bubbles.
- Add chocolate chips, blueberries, or bananas to the batter for a fun twist.
