Ingredients
  

  • 2 cups all-purpose flour
  • 3 tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 large eggs, separated
  • cups milk
  • ½ cup unsalted butter, melted and cooled
  • Cooking spray

Instructions
 

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate bowl, beat the egg whites until stiff peaks form.
  • In another bowl, whisk together the egg yolks, milk, and melted butter.
  • Add the egg yolk mixture to the dry ingredients and mix until just combined. Do not overmix; some lumps are okay.
  • Gently fold the beaten egg whites into the batter until no white streaks remain.
  • Heat a non-stick skillet or griddle over medium heat and coat with cooking spray.
  • Use a 1/4 cup measure to scoop the batter onto the hot skillet.
  • Cook for 2-3 minutes, or until bubbles form on the surface and the edges start to look set.
  • Flip the pancake and cook for another 1-2 minutes, or until the pancake is cooked through and golden brown.
  • Serve the pancakes warm with your favorite toppings.

Recipe Notes:
  • If the batter seems too thick, you can add a splash of milk to thin it out.
  • To make the pancakes even more flavorful, add a teaspoon of vanilla extract or a pinch of cinnamon to the batter.
  • If you don’t have unsalted butter, you can use salted butter, but reduce the amount of salt in the recipe accordingly.
  • The cooking time will vary depending on your stove and pan. The pancakes should take 2-3 minutes per side on medium heat.
  • Keep the cooked pancakes warm in a preheated oven until you’re ready to serve them.
