Spicy Enoki Mushroom Stir Fry
This spicy enoki mushroom stir fry recipe is a quick and easy vegetarian dish that packs a punch of flavor and heat. Perfect for a weeknight dinner or a side dish for a larger meal.

- Wok or large skillet
- Wooden spoon or spatula
- Knife and cutting board
- Measuring cups and spoons
Ingredients
- 1 lb enoki mushrooms, ends trimmed and separated
- 1 red bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 3 small onion, thinly sliced
- 3 cloves garlic, minced
- 1-2 red chili peppers, thinly sliced
- 2 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tsp sesame oil
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat a large skillet or wok over high heat. Add 2 tbsp of vegetable oil and swirl to coat the pan.
- Add the red bell pepper and onion to the pan, and stir fry for 2-3 minutes until slightly softened.
- Add the garlic and chili peppers to the pan and stir fry for another minute.
- Add the enoki mushrooms to the pan and stir fry for another 2-3 minutes until they are slightly wilted.
- Pour the sauce into the pan and stir everything together until well combined. Cook for another 2-3 minutes.
- Season with salt and pepper to taste.
- Serve the spicy enoki mushroom stir fry immediately, garnished with sliced green onions or sesame seeds if desired.

- Make sure to trim the ends of the enoki mushrooms and separate them before cooking.
- Adjust the number of red chili peppers used to adjust the level of spiciness.
