Ingredients
  

  • 2 packs rice paper noodles
  • 2 tbsp oil
  • 1 tsp salt
  • 1 tbsp soy sauce
  • 2 cloves of garlic, minced
  • 1 tsp chili flakes (optional)
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 1 cup of mushrooms, sliced
  • 1 cup of bean sprouts
  • 1 cup of chopped cilantro leaves

Instructions
 

  • Soak the rice paper noodles in warm water for 10 minutes or until they are soft and pliable.
  • In a frying pan, heat the oil over medium heat. Add the minced garlic, and chili flakes (if using), and cook until fragrant, about 30 seconds.
  • Add the sliced red bell pepper, yellow onion, and mushrooms to the pan and cook until the vegetables are tender about 5 minutes.
  • Drain the rice paper noodles and add them to the pan, tossing them with the vegetables.
  • Stir in the soy sauce, and cook for an additional 2 minutes.
  • Serve the rice paper noodles on a plate, topped with bean sprouts and cilantro leaves.
