Datil Pepper Jelly Recipe
This Datil Pepper Jelly recipe is a perfect combination of sweet and spicy, making it a versatile addition to your pantry. It's perfect as a spread on toast or crackers, as a glaze for meat dishes, or as a condiment for cheese boards.
Equipment
- Large pot
- Canning jars and lids
- Funnel
- Ladle
Ingredients
- 1 cup Datil pepper, chopped and seeded
- 1 red bell pepper, chopped
- 1½ cups white vinegar
- 6 cups granulated sugar
- 2 pouches of liquid pectin
- 2-3 drops of red food coloring (optional)
Instructions
- In a large pot, combine chopped Datil pepper, chopped red bell pepper, and white vinegar.
- Bring the mixture to a boil over medium heat, stirring occasionally.
- Reduce heat and simmer for 10 minutes.
- Remove from heat and let the mixture cool for 5 minutes.
- Strain the mixture through a fine-mesh strainer into a large measuring cup or bowl.
- Add the strained mixture back to the pot and add the sugar, stirring to combine.
- Bring the mixture to a rolling boil over medium-high heat, stirring occasionally.
- Add the liquid pectin and red food coloring (optional), stirring to combine.
- Boil for 1 minute, then remove from heat.
- Skim off any foam from the surface of the mixture with a metal spoon.
- Using a funnel and ladle, pour the hot pepper jelly into sterilized canning jars, leaving 1/4 inch of headspace.
- Wipe the jar rims with a damp cloth and seal them with the canning lids and rings.
- Process in a hot water bath for 10 minutes, then remove from the water and let cool.
- Once cooled, check the seals on the jars by pressing the center of the lid. If it pops up and down, the jar is not sealed and should be refrigerated.

Recipe Notes:
- Be sure to wear gloves when handling Datil peppers, as they can be very hot and may irritate your skin or eyes.
- This recipe can easily be doubled or tripled to make more jars of pepper jelly.
- Store in a cool, dry place for up to 1 year.
- For a milder version, use fewer Datil peppers or remove the seeds before chopping.
- Serve with cream cheese and crackers for a tasty appetizer.
- Use this pepper jelly as a glaze for grilled meats or as a condiment for sandwiches.
