Ingredients
  

  • 2 cups pitted and chopped dates
  • 1 and 1/2 cups boiling water
  • 1 tsp baking soda
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease a 9-inch square baking pan with butter or cooking spray.
  • In a small bowl, combine the chopped dates, boiling water, and baking soda. Set aside to cool.
  • In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  • Stir in the cooled date mixture and vanilla extract until evenly distributed.
  • Pour the batter into the prepared baking pan.
  • Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before removing and transferring to a wire rack to cool completely.

  • Soak the chopped dates in boiling water and baking soda for at least 15 minutes to ensure they are soft and fully infused with flavor.
