Dates Cake Sri Lankan Recipe
A delicious and moist cake made with chopped dates and simple ingredients, perfect for any occasion.
Equipment
- 9-inch square baking pan
- Mixing bowls
- Measuring cups and spoons

Ingredients
- 2 cups pitted and chopped dates
- 1 and 1/2 cups boiling water
- 1 tsp baking soda
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 eggs
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch square baking pan with butter or cooking spray.
- In a small bowl, combine the chopped dates, boiling water, and baking soda. Set aside to cool.
- In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
- Add the eggs, one at a time, beating well after each addition.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Stir in the cooled date mixture and vanilla extract until evenly distributed.
- Pour the batter into the prepared baking pan.
- Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before removing and transferring to a wire rack to cool completely.

Recipe Notes:
- Soak the chopped dates in boiling water and baking soda for at least 15 minutes to ensure they are soft and fully infused with flavor.
- Be sure to not overmix the batter to prevent a dense and tough cake.
- Let the cake cool for at least 10 minutes before removing it from the pan to ensure it doesn’t fall apart.
- Store the cake in an airtight container at room temperature for up to 3 days.
- Cream the butter and sugar together for at least 3-5 minutes until light and fluffy to ensure the cake has the perfect texture.
- Try adding chopped nuts or dried fruit to the batter before baking for an extra special touch.
