Chicken Louie Recipe

Ingredients
- 4 boneless, skinless chicken breasts
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 2 tbsp Dijon mustard
- 1 tbsp fresh lemon juice
- 2 tbsp chopped fresh parsley
Instructions
- Start by marinating the chicken breasts. In a mixing bowl, combine the salt, black pepper, and paprika. Rub the seasoning mixture evenly over the chicken breasts, coating them well. Let the chicken marinate for 30 minutes.
- Heat the olive oil in a skillet over medium-high heat. Add the marinated chicken breasts to the skillet and cook for about 5 minutes per side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set it aside.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
- Whisk in the chicken broth, scraping the bottom of the skillet to incorporate the flavorful brown bits. Cook for 2-3 minutes, allowing the broth to reduce slightly.
- Reduce the heat to low and stir in the heavy cream, Dijon mustard, and lemon juice. Simmer the sauce for 5 minutes, until it thickens slightly.
- Return the cooked chicken breasts to the skillet, nestling them into the creamy sauce. Cook for an additional 2-3 minutes, allowing the chicken to heat through and absorb some of the flavors.
- Sprinkle the chopped fresh parsley over the Chicken Louie, adding a pop of color and freshness to the dish.
- Serve the Chicken Louie hot, spooning the creamy sauce over the chicken breasts. Pair it with your choice of side dishes and enjoy the rich and indulgent flavors.
