Chez Janou Chocolate Mousse
A classic French dessert with rich, indulgent chocolate flavor and a light, airy texture.
Equipment
- Double boiler or microwave
- Mixing bowls
- electric mixer
- rubber spatula
Ingredients
- 7 ounces (200g) high-quality dark chocolate, chopped
- 5 large eggs, separated
- 1 cup (50g) granulated sugar
- 1 cup (240ml) heavy cream
- inch of salt
- Splash of liqueur (optional)
Instructions
- Melt the chocolate in a double boiler or in the microwave, stirring until smooth. Set aside to cool slightly.
- In a large bowl, whisk the egg yolks with the sugar until light and fluffy. Add the melted chocolate and stir until well combined.
- In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form.
- In another bowl, whip the heavy cream until it forms soft peaks.
- Gently fold the whipped egg whites into the chocolate mixture, followed by the whipped cream.
- If desired, add a splash of liqueur and stir gently to combine.
- Divide the mousse into serving dishes and chill in the refrigerator for at least 2 hours, or until set.
- Serve chilled, garnished with whipped cream or chocolate shavings.
