Ingredients
  

  • 7 ounces (200g) high-quality dark chocolate, chopped
  • 5 large eggs, separated
  • 1 cup (50g) granulated sugar
  • 1 cup (240ml) heavy cream
  • inch of salt
  • Splash of liqueur (optional)

Instructions
 

  • Melt the chocolate in a double boiler or in the microwave, stirring until smooth. Set aside to cool slightly.
  • In a large bowl, whisk the egg yolks with the sugar until light and fluffy. Add the melted chocolate and stir until well combined.
  • In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  • In another bowl, whip the heavy cream until it forms soft peaks.
  • Gently fold the whipped egg whites into the chocolate mixture, followed by the whipped cream.
  • If desired, add a splash of liqueur and stir gently to combine.
  • Divide the mousse into serving dishes and chill in the refrigerator for at least 2 hours, or until set.
  • Serve chilled, garnished with whipped cream or chocolate shavings.
