Equipment

  • Mixing bowl
  • Measuring cups and spoons
  • kitchen scale (optional)
  • wooden spoon or hands for kneading
  • Baking sheet
  • parchment paper
  • sharp knife or bread lame
  • Oven

Ingredients

  • 4 cups bread flour
  • tsp active dry yeast
  • 2 tsp salt
  • cups warm water

Instructions

  • Activate the Yeast: In a small bowl, combine warm water and yeast. Let it sit for about 5 minutes until foamy and frothy.
  • Mix the Dry Ingredients: In a large mixing bowl, combine bread flour and salt. Make a well in the center of the flour mixture.
  • Combine the Ingredients: Pour the activated yeast mixture into the well of the flour. Gradually incorporate the flour into the liquid until a shaggy dough forms.
  • Knead the Dough: Transfer the dough onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  • First Rise: Place the kneaded dough into a greased bowl, cover with a kitchen towel, and let it rise in a warm, draft-free area for 1-2 hours or until doubled in size.
  • Shape the Loaf: Gently punch down the risen dough, transfer it to a lightly floured surface, and shape it into a round or oval loaf.
  • Preheat the Oven: Preheat the oven to 450°F (230°C) and place a shallow pan on the bottom rack.
  • Score the Bread: Using a sharp knife or bread lame, make shallow cuts or decorative slashes on the surface of the loaf.
  • Bake to Perfection: Carefully transfer the loaf to the preheated oven. Pour a cup of hot water into the shallow pan at the bottom of the oven to create steam. Bake for 25-30 minutes or until golden brown and sounds hollow when tapped on the bottom.

Notes

Recipe Notes:
  • Use high-quality bread flour for best results, but all-purpose flour can be used as a substitute.
  • Ensure the water used to activate the yeast is warm, not hot, to prevent killing the yeast.
  • Proper kneading and rising times are essential for the bread’s texture and structure.
  • Experiment with variations such as adding herbs, cheese, or other flavorings to personalize your Biaggi’s Bread.

Special Tips:
  • For an extra crispy crust, spray a fine mist of water onto the loaf just before baking.
  • Consider weighing your ingredients for accuracy and consistent results.
  • To create a warm rising environment, preheat the oven briefly and then turn it off before placing the covered dough inside.
  • Store the bread in a paper bag or bread box to maintain its freshness. Avoid plastic, as it can trap moisture and affect the texture.
