Ingredients
  

  • 1 lb fresh rhubarb, chopped
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup sugar
  • ½ cup milk
  • 4 tbsp unsalted butter, melted
  • ½ cup golden syrup

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease a baking dish with butter.
  • In a mixing bowl, combine the flour, baking powder, salt, and sugar.
  • Add the milk and melted butter to the mixing bowl and stir until the batter is smooth.
  • Spread the chopped rhubarb evenly across the bottom of the greased baking dish.
  • Drizzle the golden syrup over the rhubarb, making sure it is evenly distributed.
  • Pour the batter over the top of the rhubarb and syrup.
  • Bake for 35-40 minutes, or until the pudding is golden brown and a toothpick inserted into the center comes out clean.
