  • 2 cups long-grain white rice
  • ¼ cup vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 1 can (8 ounces) tomato sauce
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Fresh cilantro, chopped (for garnish)

Instructions
 

  • In a large skillet, heat the vegetable oil over medium heat.
  • Add the rice to the skillet and cook, stirring frequently, until it turns golden brown. This toasting process adds a nutty flavor to the rice.
  • Stir in the chopped onion, minced garlic, diced red bell pepper, and minced jalapeno pepper. Cook until the vegetables become tender.
  • Add the tomato sauce, chicken broth, cumin, paprika, and salt to the skillet. Stir well to combine all the ingredients.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
  • Once cooked, remove the skillet from the heat and let it sit, covered, for an additional 5 minutes. This resting time allows the flavors to meld together.
  • Fluff the rice with a fork and garnish with fresh chopped cilantro.
