- 2 cups chicken broth
- 1 tsp cumin
- 1 tsp paprika
- Fresh cilantro, chopped (for garnish)
Instructions
- In a large skillet, heat the vegetable oil over medium heat.
- Add the rice to the skillet and cook, stirring frequently, until it turns golden brown. This toasting process adds a nutty flavor to the rice.
- Stir in the chopped onion, minced garlic, diced red bell pepper, and minced jalapeno pepper. Cook until the vegetables become tender.
- Add the tomato sauce, chicken broth, cumin, paprika, and salt to the skillet. Stir well to combine all the ingredients.
- Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
- Once cooked, remove the skillet from the heat and let it sit, covered, for an additional 5 minutes. This resting time allows the flavors to meld together.
- Fluff the rice with a fork and garnish with fresh chopped cilantro.
